Dessert Recipes

Goodies:
3 c. Grated Carrots, for extra moisture include some yellow squash
1 1/2 c. Chopped Walnuts, reserve some for garnish
1 1/2 c. Pineapple (1 can), drained
3/4 c. Raisins
Wet:
1c. Oil
1 1/2 c. Honey
5 eggs
1 1/2 t. Vanilla
Dry :
3 c. WW Pastry Flour
3/4 t. B. Powder
2 t.. B. Soda
1/3 t. Salt
3/4 T. Cinnamon
3/4 t. Allspice
3/4 t. Nutmeg
1/6 t. Cloves


Add dry to wet, beat well. Add goodies, beat with spatula or spoon.
350 deg. 45 min.
8 x 11 inch pan

Icing:
12 oz. soft Cream Cheese
1 t. Vanilla
1/2 c. Honey
Beat with mixer. Spread. Sprinkle with chopped Walnuts.
